Blueberry Banana Bread
I was so excited to find blueberries on sale so I bought a couple cartons and made some delicious banana blueberry bread. I made this a couple weekends ago and it turned out so delicious that it was gone in just a few days. Also a good way to make sure those spotty bananas don’t go to waste.

This recipe will make about 4 mini loafs–Enjoy!


  • 1 3/4 cups all-purpose flour
  • 1/4 cup whole milk (buttermilk or 2% ok too)
  • 3 ripe and smashed bananas
  • 1 cup blueberries
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter
  • 1/2 teaspoon vanilla extract

Preheat the oven to 350° F.

In a bowl, combine together the dry ingredients (flour, baking powder, baking soda, salt)

In another mixing bowl or a kitchen aid mix together the butter and sugars until light and fluffy. Then, beat in the eggs, milk and vanilla extract.

IMG_1881Slowly add in the flour from the other mixing bowl until it is all mixed in.

IMG_1883Add the blueberries and mix gently so the berries don’t break.

Transfer the batter into the bread pans and bake for 40 min.
